Mealtime Monday: Homemade Sweet Potato Crust Pizza

Over the weekend, my daughter and I tried a new recipe I first read about online from one of my tribe members (SITS Girls).  Since, I saw that there were many recipes online with different twists…the recipe I used is a combination of all of them.  What did we make…homemade sweet potato crust pizza!  

Not only did Desi and I have a great time cooking together, but the recipe turned out great!  While most would opt to make this recipe for a healthier spin on pizza, I just wanted to try something different.  So, as you read the recipe, be aware that you can make healthier selections for some of the ingredients.

Both my husband and daughter are not big fans of pizza.  If given the chance for take-out, pizza is the last thing on their list.  I, on the other hand, am a big pizza fan.  So when I saw this recipe, I thought to myself, let's give it a try…besides, my family loves when we try new things.

Here are the ingredients:
         
  • 1.5 c of mashed sweet potato (~ 3 small sweet potatoes)
  • 1.5 c of flour (wheat or almond)
  • 2 eggs
  • 1 egg white
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/4 tsp cinnamon
  • 1/4 tsp garlic powder
  • Pinch of basil
  • Pinch of pepper
  • 1.5 c shredded cheese (we used a pizza blend)
  • Sauce
  • Your toppings
  • Non-stick cooking spray

Preparation:

  • Pre-heat oven to 375 degrees
  • Mix ingredients in large bowl
      
  • Put non-stick cooking spray on baking pan
  • Spread mix on your baking pan
     
  • Bake for 25-30m (edges are brown)
  • Remove crust from oven, add sauce and toppings

   

  • Bake for add'l 10 minutes (or until cheese melts)
  • Remove from oven, allow cool for 5-7m, slice
  • Enjoy…we certainly did!
